
CHOCOLATE PINEAPPLE MUFFINS
Ingredients
• 250 g Flour
• 2½ tsp Baking Powder
• ½ tsp Bicarbonate of Soda
• 1 Egg
• 100 g Sugar
• 8 g Vanilla Sugar
• 80 ml Oil
• 200 g Natural Yogurt
• 2 tbsp Cocoa Powder
• 1 Pineapple
Method
Mix the flour with baking powder and bicarbonate of soda. Preheat an oven to 160°C.
In another bowl whisk an egg, then add sugar, vanilla sugar, oil and yogurt.
Add cocoa powder to your flour. I used really dark, unsweetened cocoa powder, but if you don't have it at home you can also use "normal" cocoa powder. (If you use the "normal" one, you'll have to add about 4 tbsp)
Add the flour mixture to the egg mixture and stir until everything's well incorporated.
Cut the pineapple into chunks. The size doesn't matter.
Fill the batter into a muffin tin (or into ramekins), then add the pineapple pieces.
Bake at 160°C for 20-25 minutes. Let them cool off for a few minutes, then serve
